Vanilla Chai Pancakes

Today my daughter starts her full time Nanny job. She loves kids and got a job working for a wonderful female doctor in Encinitas. She got the job almost a month ago, but had to give notice at her job West Steak and Seafood. While she loved her job there, she wasn't able to make enough to be able to get her own place. That is a goal of hers. She ended up staying a week longer than the traditional "2 week notice" until they could find a replacement. Saturday night was her last night there. She will miss all of her co-workers, but will still go in and see them. She is super excited to be working for this lovely Family now, and I am also excited for her!
  I wanted to start her day off right, and give her a little celebration. She loves chai tea this time of year. That gave me an idea for her breakfast. Why not take the flavors of chai tea and make it into a pancake? The idea really panned out. My daughter devoured these pancakes. If you do not have vanilla beans for the syrup, you can use vanilla extract instead, the vanilla beans just give it such good flavor.

Gluten-Free Vanilla Chai Pancakes
2 cups Mina's all purpose gluten free baking mix
3 tablespoons sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/8 tsp ground cloves
1/8 teaspoon ground ginger
3 eggs
1 1/2 cups buttermilk
1/2 cup brewed chai tea
4 tablespoons butter, melted 
1 teaspoon vanilla extract
oil or cooking spray
Vanilla Syrup:
1 cup water
1 cup sugar
2 TBSP butter
2 vanilla beans

Start by making your syrup:
Split your vanilla beans and scrap out all the pulp. Add to a small saucepan. Add your sugar, water and butter and bring to a boil. Reduce heat to low and stir off and on until you are ready to top your pancakes. You can store it in the fridge for later use.

Now make your pancakes:
Add baking mix, sugar, cinnamon, cardamom, cloves, and ginger  to a mixing bowl.
Mix until blended. Next add 3 eggs, buttermilk, tea, melted butter and vanilla extract and mix until fully incorporated.
Drop 1/4 cup of batter onto your hot griddle or skillet that has been sprayed with cooking spray or oil. 
Flip over and cook the other side. 
Serve topped with butter and syrup.

  1. I love how you have the fork sticking out of the stack of pancakes because that's what I would love to do... stick a fork in it. Looks so yummy. :)

  2. I don't cook gluten free very often, but these pancakes have me eager to give it another try!! They look absolutely fabulous!!!
