Bacon Wrapped Scallops



I read Snippets of Thyme's gorgeous post on Bacon Wrapped Sea Scallops. If you have not already read it. I really recommend it. Beautiful pictures. I could look at her pictures all day long. 
This recipe is Inspired and adapted from Snippets of Thyme. This is a tremendous way to make a gourmet meal for your family that is naturally gluten free and so fancy they will think that you slaved over them for hours. When in fact, they are simple to make and you can do it quickly. 


1 1/2 pounds scallops, rinsed and dried

1 pound thin sliced maple bacon strips cut in half.

Sea Salt
Fresh ground Pepper


Preheat your oven broiler. Spray a rimmed baking sheet with nonstick spray. 
Wrap each scallop with a piece of bacon and secure with a toothpick.

Place the bacon-wrapped scallops onto the prepared baking dish and season them with salt and pepper. Cook them under the broiler on high for about 20 minutes, or until the bacon is cooked through and the top is browned.
I served mine with a light Cucumber, Tomato, Balsamic Salad.
