Jalepeno, Onion, and Ham Frittata

We had a lazy weekend. It was so nice. By lazy I mean we lounged around in our comfy clothes. I cooked while Randy had his nose in a book the entire time. He got a Motorola Zoom for his Christmas present from me. And yes, he got it early. We are going to be travelling for Christmas and it was just better to get our gifts out of the way before our vacation. Ever since he got that gift he has had his face in it. I am not so sure I like it. Oh well, I pass the time by putting around in my kitchen, so I am not complaining too much. 
I got my Christmas present early too. It was actually a Christmas and Birthday present because I could not justify spending that much money on just one holiday. My birthday is in February so close enough. I got a new Nikon 1. So soon my pictures are going to be much much better. I am learning the camera and it is going to take me some time to have professional pictures. They are already better, but it is just going to take time for me to present all this camera can do. I can tell you that I absolutely LOVE it! Best gift EVER! Hopefully in a few weeks you will start to see a difference in my photographs. 
Now I just need to talk someone into buying me the Plate To Pixel book I have been wanting.
 I think my biggest challenge is that I am feeding so many people at mealtime. It is hard to take time out to take a fancy picture. It is a rare occasion for me to have any less than 6 people to feed at any given time. More likely 6 to 8 people. For instance... Tonight my son is having his girlfriend and his 2 other best friends over for movies. So that is 4 people. Then we have my Daughter and Doris that live here... that is 6. Now I also have to feed my husband and I. That is 8 people for dinner tonight. Add dietary restrictions into the mix and I usually cook at least 6 dishes a day, not including the fresh fruit and veggies I am constantly cutting up to have available for everyone. I try to take a picture and blog at least one thing a day. Some days I do more. I managed to post over 300 recipes this year. So I am doing something right. I hope to one day go back through and update all my pictures. One thing at a time. 
I added a new Print Friendly feature at the end of each blog. Hopefully this will make it easier for those of you to print off my recipes. 
So this morning Randy wanted to drag me out to breakfast. I don't like going out for breakfast. I don't like going out much period. So I asked him what he was craving, and I pleased him by making it for him. I also made it for Doris, Jordan and I, (Taylor had to work this morning), but each person likes it differently. Some don't want meat (me), others don't want spice (Doris), and others are just down right picky (Jordan). This recipe is the one I used for Randy. I also served it with my Latkes.
3 eggs
1/2 jalapeno
1/4 sweet onion
1/2 cup cubed cooked ham
1 TBSP butter
1/2 cup sharp cheddar cheese
Salt and Pepper to taste
Italian Parsley for garnish.

Preheat the oven to 350 degrees.
In a skillet, over medium heat melt the butter and add ham, onion and jalapenos. Saute for 2 minutes. 
Whip the eggs until they are light and fluffy and pour over sauteed mixture. Do not stir.
cook over medium heat for 2 minutes. Sprinkle cheese on top and season with salt and pepper.  Then transfer the pan carefully to the oven. Bake for 10 minutes.
Serve!
