Canadian Bacon Egg Cups

My daughter has been working so hard. Working 6 days a week and pulling a double shift once a week. She is saving up to record her music and get her own apartment. I am so proud of her! Today is her day off. I am surprising her with a yummy breakfast. This is a simple quick dish to serve that fills them up with protein and just starts the day off great. 
Canadian Bacon Egg Cups- Serves 2
  • 4 large eggs
  • 4 slices Canadian bacon
  • slices of fontina cheese
  • salt and pepper

Preheat oven to 350 degrees.
Lightly spray 4 cups of a muffin tin with non stick spray and insert one slice of Canadian bacon into each cup.  Carefully crack one egg into each bacon cup.Top with slices of fontina. Bake in center rack of oven for about 20 minutes, or until whites are set but yolks are still slightly runny or longer if you like firm eggs. Season eggs to taste with salt and pepper and carefully remove by gently scooping out bacon cups with a spoon. Serve garnished with your favorite fresh herbs.
