Baked Egg Nog Doughnuts

So how was everyone's weekend? Mine was good. My hubby got his Christmas present early. A new Motorola Zoom Tablet. Kept him busy learning it, and so we had a quiet weekend. Saturday we went out with friends and it was lovely. We went to the beachhouse restaurant that is right on the water here in Southern California. We enjoyed watching the sunset while we had dinner. Here is a picture of the boys when the sun is just about to set:

Sunday we stayed in. It's beginning to look a lot like Christmas! Well it is sure smelling like it at my house lately! I have mentioned on here before my daughters love for egg nog. Time to make the doughnuts! 
Today I am making CHRISTMAS doughnuts. Egg Nog Doughnuts to be exact. These would be perfect for Christmas morning. Taylor loved them.

Baked Egg Nog Doughnuts gluten free
2 cups all purpose gluten free flour
3/4 cup sugar or Sucanat
2 teaspoons baking powder
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon cinnamon
1 teaspoon salt
3/4 cup Egg Nog
2 eggs, slightly beaten
2 tablespoons butter, melted

Glaze:
1/8 cup egg nog
1 cup powdered sugar


1 tsp cinnamon
1 tsp sugar

Preheat oven to 425ยบ. Spray donut pan with cooking spray.
Mix together flour, sugar, baking powder, cinnamon, nutmeg and salt.
Add eggnog, eggs and butter.

Mix until just combined. Fill each donut cup about 2/3 full. I used a ziplock bag with a corner snipped off to pipe the dough into the slots.

Bake 9 minutes or till top springs back when touched. Cool a couple minutes, then place on a cooling rack.

Make glaze by mixing eggnog, and powdered sugar until smooth.
Dip one side of donut into the glaze, allowing excess to drip off.
Return to wire rack to allow glaze to set and sprinkle with cinnamon sugar.
Makes 12 donuts.

  1. I need to buy that doughnut pan. I almost did and put it back recently. Now I'm kicking myself. I love your doughnuts... yeah.. eggnog. Yum! PS.. how lucky are you to be so close to the beach. :)
