Cheesy Garlic Potato Heaven!

Today, as you read this post I am sailing my little heart out through the Catalina's. Getting ready for 3 days of sailing or like I call it; camping on the water, is a LOT of work. Totally worth it though. But to say the least; I have been in the kitchen non-stop. So tonight I am all packed up, and ready to go and I made easy burgers, (both vegetarian quinoa burgers for us girls and beef burgers for the boys). When I serve burgers in this house, I also serve potatoes. The two are just a tradition around here. However... these are not your normal potatoes. These are "I died and went to heaven potatoes". I was kinda in the mood for garlic bread, so I thought I would just make the garlic bread into potatoes instead. It worked. Oh my did it work! 

Gluten Free Cheesy Garlic Potato Heaven!
4 large Russet Potatoes
1 stick of butter
1 head of garlic finely minced
1 Cup Shredded Parmesan cheese
Salt and Pepper To taste.

Preheat your oven to 400 degrees.
Melt your butter and pour half of it onto a large lasagne size pan baking dish. 
Top with half the minced garlic, and half the Shredded Parmesan Cheese. 
Wash your potatoes really well. Then slice them lengthwise into 4 slices each potato. Spread out on top of the butter, garlic and cheese prepared pan. 
Top the potatoes with the remaining butter, garlic, parmesan and sprinkle with salt and pepper
Bake at 400 degrees for 40-45 minutes
Remove from the oven and serve with buttermilk ranch dipping sauce.
Best home fries out there! Really great chopped up and served with breakfast as hash also.

  2. Wow!!! Wow!! Woww!! These potatoes look beyond perfect!! I think they are one of the best roast potatoes I have ever seen. :) I love how you got both sides seasoned. Have an amazing holiday.
