Chocolate Mousse


Do you like rich chocolate desserts? If so, I have one here for you that does not take much time at all.  Perfect for these hot summer days when you don't feel like spending that much time in the kitchen. 
 Gluten Free Chocolate Mousse


10 ounces bittersweet chocolate, chopped
1 cup water 
4 tbsp sugar

Place a large mixing bowl on top of another slightly smaller one, filled with ice and cold water and set aside. 
Put chocolate, water, and sugar in a medium-sized pan and melt the chocolate over medium heat, stirring occasionally. 
Pour the melted chocolate into the mixing bowl sitting on top of ice and water, and start whisking with an electrical hand-held mixer until thick. Watch the texture as you whip and make sure not to over-whip as it will make the mousse grainy. 
Divide into 4 serving cups and serve immediately. I top mine with a little fresh whipped cream, but if you are vegan, it is good plain too!
