With Cherries in season and having this great new Cherry Pitter tool from OXO , I decided to make some cherry topping that can go on Ice Cream, Cake, Cheesecake, Custard... anything really, during these hot Summer months. Problem is that most all of the canned cherry toppings out there are FULL of syrups and sugars. That won't work. Not during the Summer! What to do? Make it with Stevia. For those of you that have not tried it yet, please do. Zero calories and it is a plant. It does not have the fake aftertaste that most all other artificial sweeteners have. It is because it isn't artificial. I have to admit I was a skeptic before, but not anymore! Using Stevia you can have a generous serving of this sweet cherry sauce and it is only 30 calories. So dig in!
4 cups fresh pitted cherries
1/2 cup granulated stevia
4 tablespoons cornstarch
1 cup water
1/2 tsp almond extract
Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract,water, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool.
This lasts in an airtight container or jar in the fridge for 1 week.
