Almond Butter Hummus


If you are like me, you are constantly wondering what to pack for lunches. I pack my husbands lunch every single day. I also make lunch for my daughter, but she usually is home for lunch. Still, coming up with ideas can get tough. I rotate through homemade ranch and hummus and onion dip and whatever I can think of to get veggies into my kids and husbands diet. They are dippers. Since today I am hosting a giveaway for Justin's Nut Butter I wanted to come up with a nice recipe that uses their yummy nut butters. I usually use Tahini when making hummus, So I decided, why not try almond butter instead of sesame seed butter? It worked wonderfully! Please stay tuned below the recipe for this wonderful giveaway. 3 boxes of lunch packs of almond butter, almond honey butter and almond hazelnut butter. 



Almond Butter Hummus
3 Tbsp almond butter
3 Tbsp fresh lemon juice
1 Tbsp plus 1 teaspoon olive oil
1/2 tsp ground cumin
1/2 tsp pepper
1/2 tsp sea salt
1 can chickpeas (15- 16 oz)
1 garlic clove crushed well
7 tablespoons water

I placed all my ingredients in the blender and blended until smooth. You can also use a food processor, but mine bit the dust a while back so I use my blender for everything. 

It is the perfect lunch snack. It went really well with Ener-G's gluten-free pretzel bread which will also be part of an upcoming giveaway.

  2. Starbucks puts these in their protein packs, and they are very delicious, lower in fat than peanut butter, and so portable.
