Happy Birthday to My Mother
My Mom's birthday is May 10th. She is coming for a visit and I asked her what she wanted me to make. Without hesitation she asked for Halibut with Gribiche and Poached eggs. She didn't get any hesitation from me. One of my favorites for sure. At our Sprouts Farmers market they get fresh farm raised halibut. Yummmmm. Nothing like sustainable fish!
She also asked for a special cake. She said when she was a little girl her mom used to make her a dark chocolate cake with 7 minute frosting. It is the first time she ever told me that. She said she hasn't had it since she was a little girl. Her mom suffered Alzheimer’s at an early age, so I understand this must be a fond memory for her. So I am making the cake for her. The cake is easy. I make chocolate cake all the time. I haven't ever made a 7 minute frosting though. First time. Here we go...
Ingredients
1 1/2 cups sugar
1 tablespoon white corn syrup
1/8 teaspoon salt
1/3 cup water
2 egg whites
1 1/2 teaspoons pure vanilla extract
Directions
Place sugar, corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes.
Beat in vanilla.
It was good. I mean really really good. My Mom said it tasted just like when her Mom used to make it. So ... success! Yay!
