kappamaki - sushi roll

We are heading out for the weekend. We are sailing on a catamaran to Catalina Island for 2 days. Randy is performing a wedding on our sailboat for 2 of our dear friends. So I am making a bunch of easy finger foods for us to snack on. One of my favorite things is kappamaki, it is a Japanese cucumber sushi roll. They are easy to make and easy to eat. Perfect for the boat. Refreshing on a hot sunny day.

Ingredients:
4 sheets of nori
8 cups sushi rice
4 Japanese cucumber, cut into long sticks (you can sub regular cucumber here)

Put a half-size nori on top of a bamboo mat (makisu). Spread about a cup of sushi rice on top of the nori. It is best to cover the nori about 3/4.
Place cucumber sticks horizontally on the rice.
Roll up the bamboo mat, pressing forward to shape the sushi into a cylinder. Press the bamboo mat firmly with hands. Unwrap the bamboo mat. Cut the sushi roll into bite-size pieces.
Chill until you are ready to serve.
