Refreshing Thai Cucumber Salad



Tonight is Thai food night. This is actually an American Thai recipe. Which means it didn't originate in Thailand. It became popular in American using Thai inspired ingredients. It is a refreshing salad to serve with any other thai dish.

Ingredients
1/4 cup rice vinegar
1/4 cup granulated sugar
3 tablespoons water
1/2 teaspoon salt
2 medium cucumbers, halved lengthwise, seeded and thinly sliced
1/2 cup finely chopped white onion
10 fresh mint leaves, chopped
1 tablespoon chopped fresh cilantro
optional: 2 tablespoons chopped dry-roasted peanuts for garnish

Combine vinegar, sugar, water and salt in a medium bowl. Whisk until sugar dissoles. Add cucumber, onion, mint, and cilantro. Toss until evenly coated. Let sit for 15 minutes. If you would like Garnish with peanuts and serve.
