Margarita Marinated Grilled Steak

We made it through prom, but life is getting all sorts of crazy for the next few weeks. My daughter turns 18 in 9 days. She graduates High School in 3.5 weeks. Our friends are getting married this weekend and my husband is performing the wedding on our sailboat in Catalina THIS weekend. Our older kids are visiting from Bend Oregon in 3 weeks. We head to the Caribbean to sail through the drakes in 6 weeks...Phew.... I am going to take this day by day. Definately a lot going on. On top of that my husband took up playing for the worship team again at church. I feel like we hardly see eachother with all this stuff going on. Haha, life sure can be nutso. But I love every minute of it.

Margarita Marinated Grilled Steak

Ingredients
2 lbs skirt steak, or sirloin
the juice of 2 limes
the juice of 1 orange
1/2 cup tequila
1 teaspoon freshly cracked black pepper
1/2 teaspoon or more to taste chipotle chile powder
2 cloves garlic, grated
1/2 teaspoon ground coriander


1. Add all ingredients, except steak to a shallow baking dish or zip-lock bag for marinating. Mix well, then add steaks. Let marinate for 2 – 3 hours.


3. Preheat grill to high. Brush with oil. Sear steak, cooking medium rare for skirt steak, and medium rare or medium for sirloin.



3. Slice against the grain and serve with rice or salad.
