Gluten-Free Chunky Vegetable and Rice Soup
Recipe adapted from Butterfly Foodie
1 tbsp olive oil
1 onion, chopped
2 cloves of garlic, chopped finely
2 stalks of celery, chopped
3 carrots, chopped
1 tbsp fresh thyme
sea salt and fresh ground pepper
1 can Rotel (diced tomato and green chiles)
6 1/2 cups vegetable stock
1 cup of wild rice
Salt and Pepper to taste
