Restaurant Salsa

Do you ever have tomatoes that are starting to get soft, and you don't know what you are going to do with them before they go bad? I am picky about my tomatoes. If they start going soft, I don't want to serve them in their raw form. That is when Restaurant Salsa really comes in handy. I adjust the quantity according to how many tomatoes I have left over.  Today I had 8 tomatoes.

8 Tomatoes
1/4 cup chopped sweet onion
1 jalepeno
1/4 tsp sugar
1 clove garlic minced
1/2 cup cilantro
1/2 whole lime juice
1/4 tsp salt
1/4 tsp ground cumin

First you need to stew your tomatoes. Bring a pot of water to a boil. Cut the tops off your tomatoes and put an X in the bottom of them. This will make it easy to take the skins off.

Boil for 10 minutes and remove the skins.
Add the skinless tomatoes and the remaining ingredients into the food processor.

Pulse until you get the salsa to the consistency you'd like about 15 pulses.
Refrigerate salsa for at least an hour.
 Serve with tortilla chips.
