Gluten Free Margherita Pizza
I am always struggling to make quick easy nutritious meals for my daughter. Mostly because when you think of gluten free... it is hard to find quick and easy. When my daughter came home from her morning shift at work today she was starving and instantly tried to dig in to the cookies I had cooling on the counter.
"NO!" I said. "Eat something healthy first".
Oh boy... here it comes. The "there isn't anything" speech.
This time I was ready.
"Do you want me to make you a pizza?"
I wish I had taken a picture of her face. She was so ready for me to snap back at her, especially because I am cranky.
"Oh my gosh, YES!" she replied.
This my dear readers is what makes having rudi's gluten free pizza crust on hand so great. Took me all of 15 minutes to make this. Course I do have fresh basil and mozzerella on hand at all times. Along with fresh tomatoes. This crust was really good. You want to know how good? The picky boy... he asked me to make him one! He liked it! He is not gluten intolerant and he still asked for one!
Here is what I did:
1 rudis gluten free pizza crust
mozzerella slices
tomato slices
basil leaves
bertolli olive oil and garlic marinara (you can use any marinara or pizza sauce you like)
Start with the pizza crust.
Put it on a baking stone or cookie sheet.
Top with marinara
Add fresh Basil leaves
Top with slices of mozzerella and slices of fresh tomato
Bake for 14 minutes at 425.

This looks absolutely delicious! I'm so glad there are more gluten free options for your daughter these days. I love rice... but how can you give up pizza..right! This gluten free pizza crust looks perfect. :)
