Creamy Cucumber Salad

I have always loved creamy cucumber salad. Cucumbers and tomatoes are my two main favorite salad ingredients, which is why you see a lot of both in my recipes. If you would like to lower the calories on this, you can use light sour cream or Greek yogurt. With just 6 ingredients and 5 minutes you can have this refreshing salad that is perfect for a Spring or Summer meal. If you have a picnic to attend, put the salad in individual jars for easy serving. 
Gluten Free Creamy Cucumber Salad

1/3 cup sour cream
The juice from one fresh lemon
2 TBSP chopped fresh dill
1/2 tsp sea salt
1/4 tsp pepper
2 big cucumbers, peeled and sliced. 

In a medium bowl, combine sour cream, lemon juice, and dill. Season with salt and pepper, and whisk well to combine. Add cucumbers, and toss to coat. 
Garnish with more dill, if desired. Serve, or refrigerate, covered, up to 4 hours.
