Fast Easy Blender Salsa

One can argue where this recipe was adapted from Pioneer Woman, Brown Eyed Baker? It is out there on so many sites. I use it all the time. Adapted to our tastes of course! 
 I keep them in the fridge until ready to use. We eat a lot of salsa. It is a great thing to have on hand to take to various picnics, pool parties, sailing etc... 
Fast Easy Blender Salsa
28-ounce can whole tomatoes (peeled) with juice (I use Muir Glen Organic)
2 10-ounce cans diced tomatoes with green chilies
1/2 cup chopped onion
2 cloves garlic, chopped
1 jalepeño, cut the stem off and cut into 4 pieces
1 cup fresh cilantro leaves
Juice from 1 fresh lime
1/2 teaspoon salt
¼ teaspoon granulated sugar
¼ teaspoon ground cumin

Add all ingredients to your blender. Pulse 10-20 times until it is the consistency that you like it.  Refrigerate for at least one hour before serving. This recipe fills 3 8 ounce jars.

  1. No matter where it came from, it still looks great. How long will this last in the fridge?

  2. If you seal it, it can last a year. If you don't, then I would guess a few weeks. It never lasts long enough to go bad in this house. I make it once a week!
