If you ask my daughter what she misses most about Gluten, she will most likely say "BURRITOS!" She never even liked burritos until we moved to Southern California. Now, since we have amazing Mexican food on every corner, she quickly fell in love with the fresh made tortillas smothered with beans, rice and cheese. While I have made my own gluten free flour tortillas,. I need quick meal ideas for Taylor to grab in between shifts. Trader Joe's has some really great brown rice tortillas that taste really darn good. If you get them, you need to use them right away, or put them in the freezer. This got me thinking about how when I was a kid, we used to have quick burritos in the freezer that I could pop in the microwave for some quick protein. That is what I am doing today.
Do ahead Gluten Free Burritos

1 can refried beans
1 cup cooked rice
1 cup salsa
1 cup shredded cheddar cheese
1 cup shredded cheddar cheese
6 trader joe's brown rice tortillas
Parchment Paper
Freezer Ziplock Bags
In a large bowl combine cooked rice and your favorite salsa.
Stir until the rice is well blended.
Place a tortilla on parchment paper, and top with refried beans, salsa rice, and cheddar cheese. If you like a meat burrito, you can add seasoned beef or chicken here. My daughter and I love bean, rice and cheese burritos.
Roll the burrito tucking in the ends. Roll up the parchment paper, also tucking in the ends of the parchment paper.
Place all the rolled burritos in a freezer safe ziplock bag, and place in the freezer until ready to use.
To reheat, Take out of the ziplock bag and place parchment paper covered burrito in the microwave. Heat for 3 minutes at 50% heat turning over halfway through the 3 minutes. Turn over once more and cook for 1 minute on regular heat.
Serve immediately. You can garnish with all the toppings you love, Sour cream, Salsa, Guac... the possibilities are endless!
