Guten Free Sweet and Spicy Cucumber Salad
I do most of my blogging in the evening. After dinner has been cleaned up and we are done socializing for the night, I head up to my room. After my husband goes to sleep, I open my laptop and start going through pictures I took while I cooked. Most people would be surprised
to know that I do not blog as I cook. I do take pictures as I cook though. Mostly to remind me the steps I took to get the dish. I take notes on what I do so that when it is time to write, I get all the facts straight. Right now I am in my room while my husband is fast asleep. This is when I get my most writing done. All quiet and no kids to feed or ask questions. My time.
Tonight I made another version of my favorite salad. I love to make long thin slices with cucumber. I wanted to add a little sweetness to it, so I added carrots that had been sliced thin as well. It was very refreshing.
Gluten Free Sweet and Spicy Cucumber Salad

1 large Cucumber, thinly cut lengthwise
1 carrot thinly cut lengthwise
1/2 cup green onion, sliced
2 tablespoons rice vinegar
1 tablespoon mirin
1/2 tablespoon sesame oil
1/4 teaspoon Chili Paste
Combine ingredients in a bowl and marinade for 30 minutes

I also take my pictures to remind me of what I put into dishes. I blog whenever I can...usually early in the wee hours of the morning like right now at 5:30am. I like peace and quiet (and no interruptions) when I am blogging. The salad looks wonderful... never tried to add chili paste into it. Must give it a go. :)
