Cheesy Chicken and Black Bean Quesadilla's
Being a Mom, it is always nice to have some easy recipes to go to when I need to feed the troops. Tonight 2 of Taylor's friends stayed over which meant 7 mouths to feed. As part of the Foodbuzz Tastemaker Program, I received Kraft Singles to try out on the family and come up with some tasty recipes. Getting Kraft Singles really took me back to my childhood. That cheese that was just as good on a sandwich as it was on a burger. I used to like to eat a slice as a snack, and it made my all time favorite grilled cheese.
It got me wondering, with how great it melts... how would it hold up with Mexican food? As I am sure you know, we are huge Mexican food fans. My favorite... Quesadilla's. A quesadilla is a flour or corn tortilla filled with a savoury mixture containing cheese and other ingredients. Ours are corn, for obvious reasons... (Celiac). Randy was skeptical when I said I was using Kraft Singles, because he loves regular sharp cheddar cheese, and he was not familiar with how the Kraft Singles would hold up. Kraft Singles won him over! Randy said he was amazed how good the cheese blended with the Quesadilla flavors. I gotta say, these Kraft Singles really made the dish. The added plus for me was it was so EASY! It took me no time at all to whip this together. The Kraft Singles are already sliced and ready. I had made my salsa earlier in the day, so it was cake. If you don't make salsa, simply go to the store and buy your favorite brand. I hope you enjoy this as much as we did. I am happy to have another easy meal recipe to go to.
Gluten Free Cheesy Chicken and Black Bean Quesadilla's
2 TBSP canola oil
1 lb chicken breast
1/2 tsp salt
1/4 tsp pepper
1 can of black beans, rinsed and drained
1 cup salsa
20 Corn Tortillas
Let me start off by saying that I did use my Quesadilla cooker. I do realize not everyone has this. DON'T WORRY! You don't have to have one to make it work. Using a heavy skillet you can get the same, if not better results. Just follow the same steps below and in stead of "placing it in the quesadilla maker" Place it in a skillet and flip halfway through (You will need to cook it longer, about 2 minutes per side on high).
Rinse and Strain your black beans.
Heat a skillet over medium high heat.
Add 2 TBSP canola oil and your Chicken breasts. Sprinkle salt and pepper over the chicken. Cook until browned on both sides.
Add black beans and salsa on top of the chicken.
Cook until the chicken easily shreds with 2 forks.
Shred chicken and stir up with beans and salsa. Heat up your Quesadilla maker -or- heat up a heavy bottomed skillet over high heat. I sprayed my maker with Olive oil cooking spray.
Add one corn tortilla, top with one slice of Kraft Singles and 1/3 cup of the chicken, salsa, bean mixture.
Top with another corn tortilla
Close the lid for 2 minutes. When you open it you will have a yummy gooey Cheesy Chicken and Black Bean Quesadilla. If you are cooking on a skillet cook on high for 2 minutes on each side.
