Strawberry Rhubarb Limeade

It is time to juice more limes. I am so happy to say that between me and my girlfriends, no limes have gone to waste this year. We have all been juicing, freezing, and cooking with them. Lime ice cubes really rock!  I wanted to make a nice refreshing summer drink and this one hit the spot! I saw this combo on Pinterest a while back. I would link back, but I didn't save it. I kept it in my mind until I found some good Rhubarb. Luckily my local Farmers market got some beautiful Rhubarb in so it is time! My kids LOVED it! I will be making this often! Hope you enjoy it too! 

Gluten Free Strawberry Rhubarb Limeade
1 1/2 cup strawberry puree (for me this was one pint of strawberries purree'd)
1 1/2 cup fresh squeezed lime juice (This was 6 limes for me)
1 1/2 cup sugar or 1 cup stevia
2 large pieces of Rhubarb (around 2lbs) chopped
1 vanilla bean
8 cups water
Ice

Chop up rhubarb. 
Add a split vanilla bean. 
Cover with 8 cups water. 
Boil until the rhubarb is soft. Strain out the bright pink juice this makes your Rhubarb Juice. Strain it into a large pitcher.

Add remaining ingredients to the pitcher, stir, and chill.
To serve pour over ice and garnish with a strawberry or lime.
