Gluten Free Parmesan and Garlic Linguine

If you are looking for a protein packed side dish, look no further. This Quinoa Pasta dish is outstanding. I have written about quinoa pasta many times before on this blog. I have had many people tell me they cannot find it. Where I live it is available at: Albertsons, Sprouts, Whole Foods, Henry's and Walmart... yes, that is right, I said Walmart. You can even order it online from Walmart. I think it is the best thing since sliced bread. Even the pickiest eaters wolf it down and have no idea it is gluten free. 
I love this dish. Great hot, good cold. Serve as a side or a main dish. Quick and easy! Enjoy!
Gluten Free Parmesan and Garlic Linguine
adapted from laurens latest 

1/2 pound Quinoa linguine pasta
2 tablespoons salted butter
1/4 cup heavy cream
1 head of garlic peeled and minced
1/2 tsp salt
1/4 tsp pepper
1/4 cup reserved cooking liquid from pasta
3/4 cup freshly grated parmigianno reggiano
fresh flat leaf italian parsley, for garnish 

Bring large pot of water up to boil.  Cook Quinoa linguine until al dente and drain, reserving 1/2 cup cooking liquid.
Place linguine back into hot pot and stir in butter, cream, garlic, salt, pepper and cheese until butter and cheese start to melt and create a sauce. 
Pour in 1/4 cup pasta water to get the sauce to the consistency you want. Serve and top with fresh parsley and more grated cheese.

    Found a recipe for quinoa tabbouleh the other day that I can't wait to try; giving up tabbouleh is not an option, it's my go-to summer dish.

  3. Jacqueline, quinoa tabbouleh is very good, but I have also found using lentils instead of the barley works great! That recipe will be up in 2 days.
