For a while I was buying pre-made hashbrown patties at Trader Joe's for something Taylor could grab and throw in the toaster oven when she needed something quick. I wanted to make them at home though, because I am just one of those people that likes to know everything that is being served in my house. She is watching her calories like I am, so I decided to make them from scratch ahead of time. They are better than the pre-packaged kind, affordable to make, healthier and just as accessible.
Gluten Free Do Ahead Hash Brown Potato Patties

1 pound russet potatoes
1/2 of a medium sweet onion, diced
1 tablespoon extra virgin olive oil
2 teaspoons snipped fresh thyme chopped
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
Nonstick cooking spray
Peel and grate potatoes; immediately rinse with cold water in a colander. Drain well, pressing lightly, then pat dry with paper towels.
Place in a large bowl. Stir onion, oil, thyme, salt, and pepper into potatoes.
Shape your potatoes onto griddle. Press down potato mixture with a spatula to flatten evenly. Cook for 5 minutes. Using a wide spatula, carefully turn potato cakes .
Cook for 3 to 5 minutes more or until golden brown.
Place cooked potato cakes on to parchment paper and then put in a freezer safe ziplock.
To reheat, preheat your toaster oven to 375. Bake for 10-15 minutes and serve.
